Aspiring Bakers #13: Enjoy Cupcakes! Hosted by Min's Blog - ORANGE CUPCAKES - WHY DON'T YOU BAKE SOME FOR YOUR BELOVED?

Making cupcakes of different tastes is my favorites. The reasons being cupcakes are easy to make, easy to decorate, and easy to share. I often use a never-fail-cupcake-standard recipe, originally adapted from Joyofbanking but have been change the ingredients a bit. I call it standard recipte because from this recipe, I have made many different kinds of cupcakes, with many kinds of fresh fruits, nuts, juice, dry fruits, jam I have.
This is my favorite standard recipte for cupcakes:

Cake Flour: 150gr well mixed with 1/2 tsp of Baking Powder
Butter at room tempreture: 150gr
Sugar: 100gr
3 eggs medium size 55gr/each including shell
Liquid: 70gr
Salt: 1/2 tsp

And the standard way to make the cake is whisking the butter with sugar & salt until pale and pluffy, then add 1 egg at a time, add the next egg only when the batter is well blended, whisk at low speed, then I add flour mixtrure in 2 folds, in-between I add half of the liquid, fold well and add the flour, and the rest of liquid. The batter can be added with up to 50gr of dry fruits, nuts, jam...
Turn on the oven with upper and lower heater, 170 Celcius Degree.
Scoop the batter into the tin with 2/3 height of cupcake-liners which have been well put in, bake 20 minutes for standard sized cupcakes or 15 minutes for mini cupcake.

When the cupcake have been completely cool, I decorate with buttercream, or whisked topping.

For these orange cupcakes, the 70ml of liquid is fresh orange juice, and the batter is added at the last fold with zester of 1 fresh orange.

The buttercream is added with 1 tbsp of condensed orange syrup, to highlight the orange taste. This is a recipte I strongly recommend, for all cupcake lovers.
